This is the 2nd time today WordPress has decided to delete/not save my post. Why?! Well, third time’s the charm, so here goes.

A belated happy 2013 to everyone! I have been on a holiday. A very, very long holiday. For over 5 weeks, I have done nothing except for eat, read, and sleep. Food wise, the only cooking I have done was my first ever nut-roast, and I am slightly embarrassed to say that my other food-related activities only involved buying lots of food and eating that food. And so, upon my return, I immediately addressed my cooking itch: vegan breakfast bars!ImageVegan (gluten-free possible) breakfast bars with apricots, almonds, prunes, and peanut butte

1/2 teaspoon orange zest2-3 tablespoons orange juice
1/2 cup chopped dried apricots
1/2 cup chopped prunes
2/3 cup sliced almonds
1 1/2 cups oats
2 tablespoons ground flaxseed
2 tablespoons wholewheat flour (oat flour for gluten-free, or any GF flour you prefer)
1/2 teaspoon sea salt
1/4 teaspoon cinnamon
1/2 cup peanut butter
1/4 cup olive oil
1/2 cup honey

Preheat the oven to 160 degrees celsius.
Zest the orange, and set aside. In another bowl, mix the dried apricots and prunes.
Heat the orange juice, and pour over the dried fruit. Stir, and allow it to set and absorb.

Toast the almonds until golden and fragrant, either in a pan or in the oven. Make sure you don’t burn them- I burnt a few of mine! Let the toasted almonds cool, and mix into the oats,  flax, flour, salt, and cinnamon.

Add the peanut butter, olive oil, and honey to the orange zest. Mix well.

Combine the three mixtures, and transfer into a baking tin. Bake for 20-30 minutes, until golden brown. Let it cool.

Cut into bars, and enjoy! 🙂
